Beer cheese is a Kentucky favorite and was first served in the 1940’s at a restaurant in Clark County. Big Russ’s family-recipe mixes southern, spicy flavor cues along with award-winning Wisconsin cheeses. Most varieties start with sharp-cheddar. Then, beer is added in order to provide a little flavor & texture as well as garlic and other spices.

HOW WE STARTED
As young girls we spent our time on the family farm with our dad, “Big Russ”, learning the values we still hold dear. His way of showing love & appreciation was through food and fellowship. For Russ there was no better way to spend his time than with friends & family eating and laughing around a table.

Big Russ Beer Cheese was created in memory of their larger than life father, Thomas Russell Snodgrass who lost his life to cancer in 2008.
Big Russ was known for his amazing food and love for entertaining! His unmistakable character shaped them into the women they are today.
